Plus, with the addition of white ponzu crab and celeriac mayo, Mike believes that once you have tried his scallops no others will ever taste the same! On top of this, scallops are a healthier way to get protein into your diet as they are much lower in saturated fats than other sources.
If you are looking for a vegetarian option Mike loves cooking with squash. A popular ingredient in his native South Africa, Mike can bring the humble squash alive in ways you wouldn’t have thought possible. On his latest three course menu, he is using miso to bring umami to this dish, accompanied by new potatoes, kale and roast almonds. Or if you are thinking about entertaining outdoors this summer Mike has two amazing barbecue menus and barbecued squash is always a hit on these menus. Butternut squash is super healthy, packed with fibre and vitamins and also linked to helping eye health, so a great addition to your plate.
Why do we always leave the best to last? The dessert course! If you still have room after all those delicious treats Mike offers an amazing choice of desserts. Did you know that his lime cheesecake comes with a baked chocolate base, or why not try a Yorkshire favourite of a bakewell tart with clotted cream, if you are a choc-o-holic, you must try his duo of chocolate mousse.
